I am turning years of running several branches into a reference that can be taught. Each chapter opens one real problem, with worked numbers, explicit assumptions and a worksheet a manager can use the next morning.
The book follows one neighbourhood family restaurant as a continuous case, so finance, operations, menu, staff and marketing are all seen on the same business.
